A bugs life

James Ross

Entomophagy is widely practiced across the world yet shunned by western society. Why don't we eat bugs? As a source of protein, insects are far more energy efficient and environmentally cleaner than conventional meats. My aim is to create the first step towards a widespread domestic generation of insect protein, in the form of a micro-farm - a move towards our society's general acceptance of this highly sustainable food source.
